Chipsi Mayai, literally meaning “chips and egg,” is a popular street food dish in Tanzania and Kenya.6 It’s a satisfying, simple omelette where crispy French fries are encased in a thin layer of egg, often served with a side of kachumbari (a fresh onion and tomato salsa).

Part A: Ingredients

  • Fries: 2 cups Pre-made or freshly fried French Fries (must be hot and crispy).
  • Eggs: 4 large Eggs.
  • Aromatics: 2 Tbsp Chopped Onion (optional), 2 Tbsp Chopped Cilantro.
  • Oil: 2 Tbsp Neutral Oil (e.g., vegetable or sunflower).
  • Seasoning: Salt and Black Pepper.
  • Serving (Kachumbari): 1 small Red Onion, thinly sliced, 1 medium Tomato, chopped, 1 Green Chili (optional), fresh Lime juice.

Part B: Instructions

Step 1: Prepare the Eggs and Fries

  1. Ensure your French fries are freshly made or reheated and kept hot and crispy.
  2. In a bowl, whisk the eggs with the chopped onion and cilantro (if using), and season generously with salt and pepper.

Step 2: Start the Omelette

  1. Heat the neutral oil in an 8 or 10-inch non-stick skillet over medium-high heat.
  2. Once the oil is shimmering, pour the whisked egg mixture into the hot skillet. Let the eggs cook undisturbed for about 30 seconds until the edges begin to set.

Step 3: Add the Fries

  1. Working quickly, gently spread the hot French fries evenly over the surface of the setting egg mixture, pressing them lightly so they embed into the egg.

Step 4: Cook and Flip

  1. Reduce the heat to medium-low. Cook for 3-5 minutes, allowing the bottom of the omelette to fully set and turn golden brown.
  2. The Flip: Place a large plate or lid over the skillet. Carefully and quickly invert the skillet to flip the omelette onto the plate/lid.
  3. Slide the omelette gently back into the skillet to cook the second side. Cook for another 3-4 minutes until the second side is set and slightly browned.

Step 5: Prepare the Kachumbari and Serve

  1. Kachumbari: Mix the sliced red onion, chopped tomato, and green chili (if using) in a small bowl. Season with salt and a generous squeeze of fresh lime juice.
  2. Slide the Chipsi Mayai onto a serving plate. Slice it into wedges or squares. Serve immediately with the fresh kachumbari on the side, often drizzled with ketchup or chili sauce.
