Nasi Goreng is Indonesia’s most famous dish, a fragrant and powerful fried rice distinguished by the dark, sweet, and savory notes of kecap manis (sweet soy sauce) and a spicy chili paste (sambal). It’s quick to prepare and often topped with a fried egg.

Part A: Ingredients
- Rice: 4 cups Day-old Cooked White Rice (cold is essential).
- Protein: 8 oz Chicken (diced), 4 oz Shrimp (optional), 4 large Eggs.
- Aromatics/Spice: 2 Tbsp Oil, 1 large Shallot (minced), 3 cloves Garlic (minced), 2 Tbsp Sambal Oelek or other chili paste (adjust to taste).
- Sauce: 3 Tbsp Kecap Manis (Sweet Soy Sauce), 1 Tbsp Soy Sauce, 1 tsp Sesame Oil.
- Vegetables: 1 cup Mixed Vegetables (e.g., peas, carrots, corn).
- Garnish: Sliced Scallions, Crispy Fried Shallots (Bawang Goreng), Cucumber slices.

Part B: Instructions
Step 1: Prep the Protein
- In a wok or large skillet, heat 1 Tbsp of oil over high heat.
- Add the diced chicken and shrimp (if using) and stir-fry until fully cooked. Push the meat to the side of the wok.
- Add the remaining oil to the center. Crack two of the eggs directly into the wok and quickly scramble them. Once cooked, mix the scrambled egg with the meat and remove everything from the wok. Set aside.
Step 2: Build the Spice Base
- Return the wok to high heat. Add the minced shallot and garlic. Stir-fry for 1 minute until fragrant.
- Add the Sambal Oelek and mixed vegetables. Stir-fry for 2-3 minutes.
Step 3: Fry the Rice
- Add the cold, day-old rice to the wok. Break up any clumps and stir-fry vigorously for 3 minutes.
- Add the kecap manis, regular soy sauce, and sesame oil. Toss the rice rapidly, ensuring it is evenly coated in the dark, sticky sauce.
Step 4: Combine and Finish
- Return the cooked chicken, shrimp, and scrambled egg mixture to the wok. Toss everything together until piping hot.
- Fry the Remaining Eggs: In a separate small skillet, fry the remaining two eggs sunny-side up for serving.
- Serve the Nasi Goreng immediately, topped with the fried egg, sliced scallions, and a sprinkle of crispy fried shallots.
