Part A: Ingredients

  • Wrappers/Noodles: 8 sheets Rice Paper Rounds (Bánh Tráng), 1 cup Cooked Rice Vermicelli Noodles (Bún).
  • Protein: 8 medium Cooked Shrimp (peeled, deveined, and halved lengthwise), 4 oz Lean Pork Loin (cooked and thinly sliced).
  • Vegetables/Herbs: 1 cup Lettuce Leaves (e.g., butter lettuce), 1/2 cup Fresh Mint Leaves, 1/2 cup Fresh Thai Basil Leaves, 1/4 cup Sliced Carrots (julienned).
  • Dipping Sauce: Hoisin Peanut Sauce or Nước chấm (traditional fish sauce dip).

Part B: Instructions

Step 1: Prep All Ingredients

  1. Ensure all filling ingredients (noodles, shrimp, pork, herbs) are prepped and laid out next to your rolling station. The key to rolling is organization.
  2. Fill a wide, shallow bowl with warm water (not hot, as it will dissolve the rice paper).

Step 2: Wet and Layer the Rice Paper

  1. Take one sheet of rice paper and dip it into the warm water for just 5-10 seconds. The paper should still feel slightly firm, as it will continue to soften as you fill it.
  2. Lay the softened rice paper flat on a clean, damp cloth or plastic cutting board.

Step 3: Fill the Roll

  1. Bottom Layer (Visible): Start about 1 inch from the bottom edge. Arrange 3-4 shrimp halves cut-side up (red side facing down) and a few pork slices, so they will be visible through the wrapper.
  2. Base Layer: Place a leaf of lettuce directly above the protein.
  3. Core Layer: Place a small amount of rice vermicelli noodles, carrots, mint, and basil in the center of the lettuce.

Step 4: Roll Tightly

  1. Fold the bottom edge of the rice paper up and over the core filling.
  2. Fold in the left and right sides of the paper over the filling.
  3. Roll the entire package tightly upwards, tucking in the sides as you go, until you have a sealed, taut cylinder.

Step 5: Serve

  • Place the finished rolls on a serving platter (try not to let them touch, or they will stick).
  • Serve immediately with the chosen dipping sauce (Hoisin Peanut is a popular choice for these rolls).
