Man’oushe is a popular Lebanese flatbread, often enjoyed for breakfast or lunch. The simplest and most classic version is topped with a paste of Za’atar (a blend of dried thyme, sesame seeds, and sumac) and olive oil, then baked until fragrant and crisp.

Part A: Ingredients

For the Dough

  • 2 cups All-purpose Flour, 1 tsp Instant Yeast, 1 tsp Sugar, 1 tsp Salt.
  • 1 cup Warm Water, 2 Tbsp Olive Oil.

For the Topping

  • 1/2 cup Za’atar Spice Blend
  • 1/2 cup High-quality Olive Oil (plus extra for serving)

Part B: Instructions

Step 1: Make and Rest the Dough

  1. In a large bowl, whisk together the flour, yeast, sugar, and salt.
  2. Add the warm water and 2 Tbsp of olive oil. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm spot for 1 to $1 \frac{1}{2}$ hours, or until doubled in size.

Step 2: Prepare the Topping and Oven

  1. Preheat your oven to the highest setting, ideally $500^{\circ} \text{F}$ ($260^{\circ} \text{C}$), with a pizza stone or baking steel inside (if available).
  2. In a small bowl, whisk together the Za’atar blend and $1/2$ cup of olive oil until it forms a thick, wet paste.

Step 3: Shape and Top the Man’oushe

  1. Punch down the risen dough and divide it into four equal pieces.
  2. Working with one piece at a time, roll it out thinly into a rough circle or oval (about 8-10 inches across).
  3. Place the dough circle on a piece of parchment paper or a lightly floured pizza peel.
  4. Spread a generous layer of the Za’atar and olive oil mixture over the entire surface of the dough, leaving about a $1/2$ inch border.

Step 4: Bake

  1. Carefully slide the Man’oushe (on the parchment or peel) onto the hot pizza stone or baking sheet in the oven.
  2. Bake for 5-8 minutes. The dough should puff slightly, and the edges should be golden brown and crisp.

Step 5: Serve

  • Serve immediately while hot. Man’oushe is often folded in half like a taco or rolled up. It can be topped with fresh mint, tomato slices, or labneh (strained yogurt cheese).
