Ayam Geprek Sambal Dabu-Dabu Recipe
Crispy Chicken Ingredients:
- 2 boneless chicken thighs (or breast fillets)
- 1 egg, beaten
- 100 gr high-protein all-purpose flour
- 50 gr cornstarch
- Salt, pepper, and stock powder for seasoning the marinade and the flour
- Oil for frying
Sambal Dabu-Dabu Ingredients:
- 10 red bird’s eye chilies, thinly sliced
- 2 large red chilies, thinly sliced
- 5 shallots, thinly sliced
- 1 red tomato, deseeded and diced small
- 1/2 tsp salt
- 1 tsp granulated sugar
- 2 limes, juiced
- 5 tbsp coconut oil (or vegetable oil), heated until very hot
Instructions:
- Fry the Crispy Chicken:
- Marinate the chicken with salt and pepper. Coat the chicken in the egg, then dredge it thoroughly in the crispy flour mixture.
- Deep-fry the chicken until fully cooked and very crispy. Lift and drain.
- Make the Sambal Dabu-Dabu:
- Combine the sliced chilies, shallots, and diced tomato in a bowl. Add the salt and sugar.
- Pour in the lime juice and stir.
- Drizzle the sambal mixture with the hot, sizzling oil. Stir well. The oil will lightly cook the raw ingredients.
- Smash and Serve:
- Place the crispy chicken on a mortar and pestle (cobek). Gently smash the chicken until it is slightly bruised.
- Spoon the fresh Sambal Dabu-Dabu evenly over the chicken.
- Serve immediately with warm rice.
